Hearty Veggie Salad

Threw together this delectable hearty mix this evening after a killer cross fit session. This cooked salad according to my partner is restaurant worthy woohoo

Ingredients
1 red onion
1 white onion
Coconut Oil
Garlic chopped
Field mushrooms (handful)
Kale
Spinach
Green Pepper (half)
Red Pepper
4 Sun-dried Tomatoes chopped
Butterbeans
1 lemon
1 lime
Turmeric
Sweet Paprika
Mixed herbs

Instructions

So we’ve got red and white onion lightly browned on the hob in coconut oil. Add some chopped garlic, a Handful of field mushrooms, kale, spinach (literally a whole bag between two), half a chopped green pepper, a chopped roasted red pepper, 4 chopped sundried tomatoes and a can of butterbeans. Add the juice of 1 lemon and 1 lime and a sprinkling of turmeric, sweet paprika and mixed herbs. Enjoy!
