Berry Chia Pot

Ingredients – Serves three

50 grams chia seeds

180ml ricemilk

teaspoon vanilla essence

175g frozen berries

3 tablespoon coconut cream

half a banana

3 teaspoon of cinnamon powder

70ml rice/almond milk

100grams jumbo oats

3 tablespoon dessicated coconut

  1. Place the jumbo oats at the bottom of your chosen jars. Soak in a little water just to cover and leave to stand.
  2. For the chia layer, place the chia seeds, rice milk, vanilla essence and cinnamon in a bowl and stir. Once mixed pour this mixture over each of the soaking oat pots until they are each 3/4 full. Place each jar in the fridge overnight.
  3. For the berry coulis. Using a blender, mix the coconut cream, banana and frozen berries. Blitz until it has a thick smoothie like texture. Put this in the fridge until the the remaining chia pots have been chilled overnight.
  4.  In the morning spoon the berry coulis into your chia and oat pots all the way to the top then sprinkle with dessicated coconut.
