Wow! Who knew nut butter was so easy to make! Must say I’m pretty proud of this one, went so well with this gluten free walnut and banana loaf and also great in porridge.
All you need is a food processor and 200 grams of unsalted cashew nuts. I also added Himalayan salt, a teaspoon of unsweetened cocoa and a teaspoon of cinnamon to sweeten.
First roast the cashews in the oven for five mins until browned. Once cooled Add the cashews to a food processor and whizz until creamy. After a few minutes add the teaspoon of cocoa, cinnamon and salt then continue blending. You may need to stop and start the blender several times during the process. It Can take up to 6 minutes so you just need to patient to allow for the nut fats to be drawn out which will create the creamy texture.
